Heidi Farm Cheese
We’re big fans of the Swiss-style cheeses produced by Heidi Farm, in Tasmania. Rumour has it that the farm’s founder yodeled with delight when he discovered the idyllic patch of land on which the company would flourish. Situated in the north of Tasmania, Heidi Farm produces a Tilsit, Gruyere and Raclette we are happy to show you on your next visit to the store.
Tilsit has a rich, dense texture with hints of nutty flavours, and is delicious when enjoyed in the European style at breakfast time with fresh, crusty bread. It’s also very useful in sauces and for grilling or melting over vegetables.
Heidi Farm Gruyere is an award-winning cheese that is handcrafted using traditional techniques. Matured for at least nine months, sometimes longer, its soft texture makes it a terrific cooking cheese, especially suitable for fondues or sauces.
The rind of Raclette is washed and scrubbed during production, promoting the development of a rich flavour and intense perfume. An Australian Grand Champion Cheese winner several times over, this cheese is wonderful when served melted on waxy potatoes and accompanied with pickles.
